Xiapu, in the north-east corner of Fujian, has the largest mudflats of any county in China; between tides the fishermen grow laver, dry kelp and forage the flats, and the poles, nets and reflections on the flats become natural pictures in the light — it is called 'the finest mudflats in China'. The day begins before dawn for sunrise at Beiqi, returns to town for sleep and breakfast, spends midday on the county town and the seafood market, waits out the afternoon at Dongbi for sunset, and closes with a seafood dinner.
The recommended plan is “One Day in Xiapu — Mudflats and Light”: about A full day · about 11 hours (a session each at dawn and dusk), 7 stops —Beiqi · Sunrise, County Town · Breakfast and a Rest, The Seafood Market · Reading the Catch, Xiaohao · the Golden Sands, Dongbi · Sunset, Laver Racks and Boats Coming Home, Seafood Dinner. Every stop comes with Chinese vocabulary, pinyin, set phrases and cultural notes at roughly HSK 3 level.
Xiapu County belongs to Ningde, Fujian, with a coastline of over four hundred kilometres and the largest mudflats in China. Mudflats are the silty tidelands drowned and bared twice a day — and what looks like mud is in fact the fishermen's farmland: laver grows on poles set in the flats, kelp hangs on racks to dry, and razor clams, mud snails and mudskippers hide in the silt. Xiapu's fame is not any single sight but the light: at sunrise and sunset the low light strikes the wet flats, the water throws back glare, the mud shows its patterns, and with fishing boats, bamboo poles and people at work any frame becomes a picture. So the game here differs from everywhere else — it is a game of tides: check the daily tide table and line the ebb up with sunrise or sunset for the good images; catch the wrong hour and the flats are just mud. Beiqi for sunrise, Dongbi for sunset, Xiaohao for the 'golden sands', and Yangjiaxi for banyans and maples up in the hills. The shore is windy and the mud slick; the photo spots mostly sit on the road above — never descend into the mud for one picture. Each stop carries the words and sentences most likely to come up that day, so you can read them aloud here and use them there.

霞浦最经典的日出机位:光从海面打过来,滩涂和紫菜竿全部变成剪影。
Xiapu's classic sunrise position: light sweeping in from the sea, turning flats and laver poles into silhouettes.
Beiqi is Xiapu's number-one sunrise position: the roadside on the hill behind the village, a walk of ten-odd minutes, and you arrive before first light. The sun comes up over the sea and the light strikes the flats at a slant, laver poles standing one by one in the water, boats trailing long reflections; at the right tide the watermarks on the mud show like the veins of a leaf. The spot is small — claim it early in season. The wind is strong and the shore at dawn much colder than town, so wear a thick jacket; from the county town a taxi takes about twenty minutes.

查好当天日出时间提前四十分钟到;机位小早点占;凌晨海边风大穿厚外套。
Check sunrise time and arrive forty minutes early; the spot is small, so claim it early; the dawn shore is windy — wear a thick jacket.
The county town is small and lives off the sea, and breakfast is rich: digua fen kou — a paste of sweet-potato starch with oysters and shrimp, a Xiapu specialty — fish-slice soup (thin sheets cut from pounded miu croaker), thick soup and pot-edge paste. Then back to the guesthouse for a second sleep: the mudflat photographer keeps dawn and dusk sessions, and without the midday nap the evening session collapses. After sleeping, potter along the road toward Sansha, or settle the afternoon's transport early.

A circuit of the seafood market to read what the flats give up: razor clams, mud snails, mudskippers.
Half the goods at Xiapu's market come off the flats: razor clams (long-shelled, grown set in the mud — best stir-fried with chilli or in soup), pickled mud snails, mudskippers (the little fish that hop the flats, stewed in soup locally), oysters, laver and kelp. The best hour is after the boats come in. To eat, small shops beside the market will cook your purchase for a small fee. Xiapu's laver is nationally famous; the 'first-water' laver — the first harvest — is the most tender, so ask which is which.

Watermarks the tide leaves in the sand turn the whole beach gold when the slanting sun strikes them.
Xiaohao is a sand beach rather than mud: after the ebb the sand keeps the combing patterns the tide has drawn, and when the evening sun strikes them low from the west they catch the light and the whole beach looks gilded — photographers call it the 'golden sands'. The shooting spots line the road on the hill behind the village, a few steps apart. The pictures here are abstract — watermarks, light and shadow, the occasional forager crossing — and composition matters more than merely getting the shot. The tide decides everything; check the day's tide table before coming.

Xiapu's number-one sunset position: the sun into the sea, oyster-hanging boats, and one long reflection down the flats.
Dongbi's sunset is Xiapu's signature: the sun drops into the sea, a water channel down the flats pulls the light into one gold line, laver poles and boats lined along it — small boats entering on the flood, the mud bared on the ebb, each with its own picture. The positions sit on the roadside on the hill behind the village, and the days around spring tides are the finest. Windy and busy — the photographers queue at dusk, tripods one against another. Dark comes fast after sunset, and the road back to town runs through the countryside: drive slowly.
Practical note · 实用提示
提前一小时占位;海边风大,相机脚架压稳;散场时车多,走乡道开慢。
Claim a spot an hour early; the shore wind is strong — weight your tripod; after the session traffic is heavy, so take the country road slowly.
Sansha is a fishing-harbour town: at dusk the boats come in one by one, decks stacked with kelp or laver depending on the season, and on the quay the catch is received, weighed and loaded. Laver is grown by driving bamboo poles into the flats with ropes slung between them, the seedlings attaching to the ropes; at the ebb the whole rack bares, like field furrows in the water. On the quay do not block the unloading lanes, and greet people before photographing. The harbour settles by nine — come early for the bustle.

The stalls win on freshness: chilli-fried razor clams, steamed yellow croaker, red-roe crab (the hen crab with red roe, a Xiapu specialty), fish-ball soup (pounded from miu croaker, springy), laver and pork-rib pot, oyster omelette.
