A complete Ming-dynasty wall and the old draft banks in the morning, Pingyao beef and wantuo noodles at noon, a magistrate's court and an escort agency in the afternoon, then 'See Pingyao Again' and oil tea back at the inn — eight stops, each with the Chinese you will actually use there.
The recommended plan is “One Day in Pingyao — Walled City and Draft Banks”: about A full day · about 13 hours, 8 stops —Pingyao City Wall, Rishengchang Draft Bank, Ming-Qing Street (South Street), Pingyao Beef · Wantuo · Kaolaolao, Pingyao County Court, Security Escort Museum, 'See Pingyao Again' Immersive Show, Old Town at Night · Inn Courtyard. Every stop comes with Chinese vocabulary, pinyin, set phrases and cultural notes at roughly HSK 3 level.
Pingyao, in central Shanxi, is a remarkably complete Ming-Qing county town, inscribed as a World Heritage Site together with its city wall. Its fame rests on the 'draft banks' — among China's first banks, and Rishengchang is almost the country grandfather of modern banking. This route follows the real rhythm of a day: from the south gate onto the wall for a stretch, then down to the draft banks such as Rishengchang, Pingyao beef, wantuo and kaolaolao at noon, the magistrate's court and the security-escort museum in the afternoon, an evening performance of 'See Pingyao Again' (book ahead), and back into the old town for the lights and a seat in the inn's courtyard. The streets are all stone-paved — wear comfortable shoes; Shanxi is cold in winter, so do not skimp on a down jacket. Each stop carries the words and sentences most likely to come up that day, so you can read them aloud here and use them there.
Best time · 最佳季节:四月到六月、九月到十月最好,天高气爽;正月里年味最浓,但很冷、人也多April to June and September to October are best, clear and mild; the first lunar month is the most festive but cold and crowded

完整的一圈明代城墙,能上去走一段、看整座古城。
A complete ring of Ming walls you can walk along, looking down over the whole town.
Built in the Ming dynasty, the Pingyao wall runs over six kilometres, with seventy-two watchtowers and three thousand battlements — one of the most complete town walls surviving in China. Climb up at the south or Yingxun gate and walk a stretch: on one side the dense grey-tiled roofs, on the other the moat, and the 'turtle city' plan of the old town is clear at a glance. With its barbicans and corner towers, it is slow going for anyone who loves old architecture.
Practical note · 实用提示
上城墙要买通票;垛口边别靠太近、看好小孩;下午光线更适合拍照。
A combined ticket covers the wall; keep clear of the battlements and watch children; afternoon light is better for photos.
Rishengchang was founded in 1823, in the third year of the Daoguang reign, as China's first private institution devoted to remittance and deposit business, with more than thirty branches at its height. Inside, the front courtyard holds the counters and accounts office, the rear the manager's quarters, with ledgers, drafts and abacuses of the day on display. The commentary explains where the phrase 'remit across the world' came from, and how the bank used codes and secret marks against forgery — genuinely interesting.

The courtyards are similar — one or two of the best will do; the commentary is worth hearing.
Pingyao's 'Ming-Qing Street' means the South Street area, lined with well-preserved Ming-Qing shopfronts: silk shops, pawnshops, apothecaries and escort agencies, alongside old firms selling polished lacquerware, Pingyao beef and Taigu cakes. Grey brick, red lanterns and wooden signs run the length of it — the most atmospheric part of the old town. Wander slowly, step into the shops, and pick up gifts along the way.

Pingyao beef is the star, with wantuo and kaolaolao — the most authentic meal in town.
Pingyao's food is hearty: Pingyao beef is cured and then braised, glossy red and rich without being greasy, sliced and eaten cold; wantuo is a steamed buckwheat snack, cut into strips and dressed with vinegar and chilli; kaolaolao is rolled oat noodles, steamed and dipped in sauce; there are also cat's-ear and knife-shaved noodles. Shanxi people love vinegar — do not forget the jug of aged vinegar on the table. In winter a hot bowl of oiled pork or wantuo is a comfort.

Look for established beef brands; noodle portions are large — two dishes suit two people; the vinegar is the soul of it.
The Pingyao county court is among the largest and most complete surviving, from the main gate and ceremonial gate to the great hall, the second hall and the rear garden — the whole set is intact. There are scheduled performances of the 'magistrate holding court': robes, drum and a case being judged, to the visitors' amusement. Instruments of punishment, a jail and old notices remain, letting you picture life in a yamen.

The banks moved money, the escorts moved goods — the two legs of Shanxi merchants.
In the old days the draft banks handled remittances while the long-distance transport of goods and silver fell to the escort agencies. Pingyao's escort museum keeps the training yard, escort carts, banners and weapons, explaining how the escorts travelled, called their signals and faced bandits. Seeing the banks and then the escorts completes the picture of the Shanxi merchant network: ledgers and drafts on one side, blades and sworn brothers on the other.

A walk-through immersive play about an escort and a city.
'See Pingyao Again' is by the director Wang Chaoge and tells of the draft banks, the escorts and the Shanxi merchants. The audience does not sit still: with no fixed seats you follow the actors through scene after scene — now an escort's courtyard, now a street, now a hall where a bride is chosen. Lighting, music and staging are finely done, and you leave understanding Pingyao far better. In season, book well ahead.
