Old town and Cangshan views in the morning, a fresh baba cake in Xizhou at noon, an afternoon cycling the Erhai shore and tasting the Three-Course Tea, and People's Road back in town at night — eight stops, each with the Chinese you will actually use there.
The recommended plan is “One Day in Dali — Cangshan and Erhai”: about A full day · about 13 hours, 8 stops —Dali Old Town, Three Pagodas of Chongsheng Temple, Cangshan · Cable Car, Xizhou Old Town · Xizhou Baba, Erhai Eco-Corridor, Bai Three-Course Tea, Shuanglang Old Town, Dali Old Town · People's Road Night Market. Every stop comes with Chinese vocabulary, pinyin, set phrases and cultural notes at roughly HSK 3 level.
Dali, in western Yunnan, backs onto Cangshan and faces Erhai Lake. It is the seat of the Bai Autonomous Prefecture and the place many people mean by 'wind, flowers, snow and moon' — the wind of Xiaguan, the flowers of Shangguan, the snow of Cangshan and the moon over Erhai. This route follows the real rhythm of a day: a walk through the old town and the Three Pagodas in the morning, then a cable car up Cangshan for the whole view of Erhai; north to Xizhou at noon for a fresh baba cake and the courtyards of the Bai; back along the Erhai eco-corridor by bike in the afternoon, a cup of the Bai Three-Course Tea, then Shuanglang for the lake; and back to town at night, where People's Road comes alive. Dali sits at about 2,050 metres — the sun and UV are strong, so sunblock and a hat are essential; the lake shore is windy, so take care on a bike. Each stop carries the words and sentences most likely to come up that day, so you can read them aloud here and use them there.
March to May and September to November are best — blue skies, little wind, mild; the rainy season from June to August brings showers
Times, prices and opening hours change by season — confirm on the day. The order here is a sequence, not a timetable.

Dali Old Town
Dàlǐ Gǔchéng
A Bai town of grey tiles and white walls, with Fuxing Road and People's Road as its two main streets.
Dali Old Town dates from the Ming dynasty, and its gate towers, walls and stone-paved streets survive. The main street, Fuxing Road, runs from the south gate to the north gate, while People's Road is full of guesthouses, cafés and small shops. The signature Bai house is the 'three wings and one screen wall' — three sides of rooms around a white wall painted with landscapes and flowers. Early morning is quiet and well lit, ideal for a slow walk; stalls sell grilled milk fans, flower cakes and tamarind juice.

One tall pagoda and two smaller ones at the foot of Cangshan — the emblem of Dali.
The Three Pagodas were built in the Tang-dynasty Nanshao kingdom. The central one, Qianxun Pagoda, stands nearly seventy metres tall, flanked by a smaller pagoda on each side in a tripod arrangement. Backed by Cangshan and facing Erhai, they make one of Dali's classic pictures. Behind them is the large Chongsheng Temple, which leads toward the foot of the mountain; on a clear day the lake and hills are all before you.

Ride up Cangshan and look out over the whole of Erhai and the Dali basin.
Cangshan has nineteen peaks, the highest over four thousand metres, often wrapped in cloud. Most visitors take the Gantong or Zhonghe cable car; at the top a trail called the Jade Belt Walk runs across the mountainside, giving views down over Erhai and the town of Dali. The weather shifts between sun and mist, and a sea of clouds often forms after rain. It is high and cold — bring a jacket, and pace yourself on the trails.
Practical note ·
It is far colder up top — bring a jacket; cable queues are long in season, so go early; if the altitude affects you, do not push on.
Xizhou, on the western shore of Erhai, is one of the best-preserved Bai towns, with large, finely carved mansions such as the Yan family home. Its most famous street food is the Xizhou baba: a flaky wheat cake made sweet (rose sugar, bean paste) or savoury (minced meat, spring onion), best straight from the oven. It is also a home of tie-dye and the flaky baba, so you can eat while looking at Bai courtyards and crafts.

A cycling path along Erhai, water on one side and fields on the other.
The Erhai eco-corridor runs for dozens of kilometres along the western shore, reserved for walking and cycling, with no motor traffic. Caitun, Longkan pier and Gusheng village are stops along it, and every pause gives a lake view. Rent a bicycle or e-bike and ride slowly, watching waterbirds and the reflection of Cangshan in the wind — the most pleasant afternoon in Dali. Sunblock and water are a must, and mind your balance when the wind picks up.
Practical note ·
Sunblock and water; e-bikes are easier than bicycles; no cars on the corridor — keep off the highway.
The three-course tea is the Bai's most formal welcome: the first cup is bitter, meaning life's hardship first; the second is sweet, with milk fan, walnut and brown sugar, meaning sweetness after hardship; the third lingers, with Sichuan pepper, ginger and cinnamon, meaning looking back on the past. It is often served with Bai song-and-dance. Milk fan is a local speciality made from cow's milk, good grilled or fried.

Some performances charge a ticket; milk fan and flower cakes make good gifts.
Shuanglang, on the northeast shore, is one of the best places to watch the sun set over Erhai: as it drops behind Cangshan the lake turns gold, and Dali town and the hills line up across the water. The town has Nanshao scenic isle and Yuji isle, plus many lakeside guesthouses and cafés. It is quieter than the old town — a good place to sit, watch the gulls and take in the sunset.
Practical note ·
Claim a spot early for the sunset; the shore is windy and cool after dark — bring a jacket.
At night the old town returns to its liveliest: People's Road fills with stalls selling skewers, flower cakes, tamarind juice and handmade trinkets, with singers strumming; the bars and cafés along Fuxing Road and the lanes light up too. Have a local meal (sour-spicy fish, milk fan, cold chicken rice noodles), then wander, listen to music and take in the lights to round off the day.
Practical note ·
Ask prices first; crafts and silver are negotiable; it is crowded, so watch your things.
