Gulls at Cuihu in the morning, a bowl of crossing-the-bridge noodles at noon, wind off Dianchi and the view from the Western Hills in the afternoon, and Asia's biggest flower market after dark — eight stops, each with the Chinese you will actually use there.
The recommended plan is “One Day in Kunming — Dianchi Lake and the Flower Market”: about A full day · about 12 hours, 8 stops —Cuihu (Green Lake) Park, Yunnan University (old campus), Crossing-the-Bridge Rice Noodles, Golden Horse and Jade Rooster · Nanping Street, Yunnan Provincial Museum, Dianchi Lake · Haigeng Dam, Western Hills · Dragon Gate, Dounan Flower Market. Every stop comes with Chinese vocabulary, pinyin, set phrases and cultural notes at roughly HSK 3 level.
The day is built around Kunming's two themes: the lake in the city and the lake outside it. Start at Cuihu Park for the gulls, then wander the old Yunnan University campus next door; a bowl of crossing-the-bridge noodles at noon, with the downtown Nanping Street and the Golden Horse and Jade Rooster arches; the Yunnan Provincial Museum in the afternoon, then out to Dianchi, riding the cable car up to the Western Hills' Dragon Gate for the view over the whole lake; and the Dounan flower market in Chenggong to finish, which only gets going after dark. Kunming sits at about 1,900 metres — altitude sickness is unlikely, but hills and stairs will leave you a little short of breath, so take them slowly. The local speech is Kunming dialect (Southwestern Mandarin) and Mandarin works everywhere. Each stop carries the words and sentences most likely to come up that day, so you can read them aloud here and use them there.

A lake in the middle of town — and in winter, packed with visiting gulls.
Cuihu sits in the centre of Kunming and locals walk, play cards and sing here all year. The peak is winter into early spring, when thousands of black-headed gulls arrive from Siberia and wheel over the water — hold up a piece of bread and they land on your hand. The park is free, with willows and covered walks around the lake, and the morning light is good for sitting a while.

A bowl of scalding chicken broth that cooks raw slices at the table.
Crossing-the-bridge noodles are Yunnan's signature: a bowl of scalding chicken broth arrives with a layer of oil holding the heat in, then raw meat slices, quail egg, vegetables and noodles go in in order, cooking through in a moment. The proper sequence is meat first, then vegetables, then noodles. The broth is very hot — do not drink straight away; ladle some into a small bowl to cool. One portion is generous and enough for one.

Dianchi is Yunnan's largest freshwater lake and Kunming sits on its north shore. Haigeng Dam is a long causeway reaching into the water, the Western Hills at one end and the city at the other, with open water between. From winter into early spring the gulls gather here too — more than at Cuihu. The dam is windy and pleasant to sit on, and dusk gives the best outline of the Western Hills opposite.
